The ESP32 for anything new: it has Bluetooth as well as Wi-Fi, more pins, two cores and more RAM. The ESP8266 is still worth it when the job is purely Wi-Fi and the budget is tight, or when you need the tiny ESP-01 footprint.
Yes - add the ESP32 board package in Board Manager and most Arduino sketches and libraries work. MicroPython and Espressif ESP-IDF are also supported.
No. ESP32 and ESP8266 run at 3.3V logic. A 5V sensor output can damage the pin, so check the sensor voltage on its product page and use a level shifter where the two do not match.
Almost always power. USB from a laptop often cannot supply the current the radio draws when it transmits. Use a proper 5V supply or a powered hub before suspecting the board.
